“Agoureleo” – Unripe Olive Oil

In the olive groves of the province of Sitia, the natural Olive oil is produced, produced from the unripe unwrinkled olives which retain their green colour, hence the name Agoureleo (Unripe oil). It has a luminous, intense green colour, while it differs from the Extra Virgin Olive Oil in flavour, since it is intensely bitter and spicy, with a fruity flavour. The olives are collected in the beginning of October by hand, and their processing takes place on the same day. It contains all the vitamins and provitamins of olive oil as well as metals and polyphenols, which protect cells from acidic stress, active oxygen and free radicals. It is mostly consumed raw.
